Everyone goes crazy for a phyllo shell appetizer and these buffalo chicken bites are no exception. They have all the buffalo chicken goodness you know and love bundled up in a perfectly crispy shell. I have made so may shell appetizers over the years, it’s so hard to pick a favorite. If you’re looking for more ideas, I have linked them below. You really can’t go wrong. There are even a few “non cook” options that are fabulous for throwing together in a pinch for last minute guests. Whip them up for the holidays, serve as an appetizer for your next dinner party or just enjoy a tray for yourself on game day!

Buffalo Chicken Bites
Ingredients
- 2 packages of phyllo shells
- 1 cup cooked chicken breast, shredded or chopped (I like to use rotisserie chicken)
- 1/4 cup celery, diced
- 1/3 cup cream cheese
- 1/4 cup blue cheese dressing
- 1/4 cup blue cheese crumbles, plus more for topping
- 1/4 cup Frank's Red Hot Sauce or preferred buffalo/wing sauce
- 2-3 green onions, sliced
Instructions
- Preheat oven to 400 degrees.
- Mix together all of the ingredients except green onions.
- Fill each phyllo shell with the mixture.
- Top with additional blue cheese crumbles.
- Bake at 400 degrees for 12-14 minutes, or until golden brown and heated through. Watch these carefully as they brown up quickly!
- Top with sliced green onions and enjoy!

WHERE TO FIND PHYLLO SHELLS
You can find these phyllo shells at most major grocery stores in the freezer section by the phyllo dough or pie crusts. If you can’t find them, you can substitute phyllo dough. When subbing phyllo dough, simply thaw the dough according to package instructions. Cut into even bite size squares that are big enough to fit into a mini muffin pan. Use 1/3-1/2 the thickness of the dough (it separates into sheets) for each piece. I wouldn’t recommend using the entire thickness – it’s too much dough. Press each square into muffin cavity and fill as described above. One last suggestion is to use wonton or egg roll wrappers. Bake per the instructions above for phyllo and wonton wrappers.
ALTERNATIVES FOR BLUE CHEESE
If you don’t care for blue cheese, you can substitute ranch dressing for the blue cheese dressing. Instead of blue cheese crumbles, try shredded cheddar, colby or mozzarella.
