Cucumber Daisy Puff Pastries

If a cucumber sandwich and a puff pastry had a baby, it would be these individual cucumber daisy puff pastries. These couldn’t be cuter or more delicious. Not to mention, they are incredibly easy to make and only require 6 ingredients. They are perfect if you’re hosting for Mother’s Day, a girls brunch or a girls night in. You could also take these along to accompany a picnic lunch. Appetizers have got to be my favorite food group and they’re even better when they are in adorable shapes like these daisies.

Servings 4

  • 1 sheet puff pastry
  • 2 mini cucumbers
  • cream cheese to taste
  • everything but the bagel seasoning to taste
  • 1 egg
  • dill, fresh or dried to taste

  • Preheat oven to 400 degrees.
  • Cut flower shapes into puff pastry with a flower shaped cookie cutter. If you use the same cutter I linked in this post, you will have enough for 9 daisy flowers. You can use the excess dough to make additional daisy flowers if desired.
  • Cut a round shape into the center of each daisy flower and poke the center dough with a fork. I have also linked a set of round cookie cutters which work perfectly with these.
  • Beat 1 egg with 1 tsp water to make egg wash. Brush each flower with egg wash and top with everything but the bagel seasoning.
  • Bake on a parchment lined baking sheet at 400 for approximately 12 minutes or until golden brown. Allow to cool.
  • *These tend to puff up a little more than desired, so push the center again with the circle cookie cutter to flatten, define the flower shape and provide a defined space for the cream cheese and cucumber.
  • Clean, dry and slice mini cucumbers evenly.
  • Fill each center of the daisy flower with cream cheese. You can add as little or as much as you would like. I used a whipped chive flavor, but you can use any savory flavor you like best! Jalapeno would also be very good.
  • Add mini cucumber slices on top of cream cheese.
  • Top with dill to taste and enjoy!

If you do a lot of baking, you may also want to pick up a pastry brush. The one below comes in so handy for recipes like this one!

I love Nordic Ware products, so I am including two options for baking sheets that will be great for all your baking – and cooking needs. We make a lot of “sheet pan” meals, so these are always getting a lot of use in our house.

While you may be hesitant to purchase an item like the flower cookie cutters for just one recipe, there are many uses for cookie cutters. Besides cookies, you can use cookie cutters for many puff pastry treats like these savory heart tarts or these sweet raspberry heart tarts.

And, if you’re a fan of brie, you can also adapt this recipe to be a daisy flower shape instead of a heart!

Not in the mood for baking? Cookie cutters are great for cheese and grazing boards too. I use them all the time to cut out fun shapes in the cheese. This allows you to customize each board and make it a bit more festive for each season or holiday. I’ve also used cookie cutters on grazing boards to hold items like candy or nuts.

For this board, I used the daisy flower cutters linked above and added chives and parsley to create the flower stems.

Here are a couple more examples of cheese, candy and grazing boards I put together for various occasions and holidays using cookie cutters to help make them more festive.

Below is a great example of how I use cookie cutters to gather certain items on the board. This adds visual interest and makes the board more festive and fun for the season or holiday.
