Easy and Delicious Party Appetizer: Avocado Shrimp Bites

If you’re looking for an easy and delicious party appetizer, try these avocado shrimp bites! They are extremely simple to make and only require 6 ingredients. Plus, they’ll be ready in no time as there is very little actual cooking involved. Simply assemble the ingredients together and plate them up! Don’t let the ease of this recipe fool you – they are absolutely delicious. You’ll want to gobble up the whole tray!

Avocado Shrimp Bites

Ingredients
  

  • 1 package phyllo shells
  • pre-made guacamole
  • peeled and deveined shrimp
  • blackened seasoning
  • cilantro
  • cotija cheese

Instructions
 

  • Bake phyllo shells on a cooking sheet at 350 degrees for 5 minutes. Allow to cool.
  • Detail (15) shrimp. Pat dry and season liberally with blackened seasoning.
  • Heat 1 tablespoon extra virgin olive oil in a pan over medium heat. Sautee shrimp until cooked through, flipping halfway in between.
  • Assemble shrimp bites. Add pre-made guacamole to each shell with a spoon or piping bag. Top with shrimp.
  • Wash cilantro and pat dry. Chop and add desired amount to each shrimp bite.
  • Sprinkle each piece with cotija cheese.
  • Plate and enjoy!

Notes

While you can certainly make your own guacamole for this recipe, I used pre-made guacamole. You can add as much or as little guacamole as you like in this recipe.

PHYLLO SHELLS SUBSTITUTIONS

Phyllo shells can be found next to the pie crusts in the freezer section of the grocery store. Most major grocery stores sell these, but I do have a difficult time finding them at Target grocery. I have also never seen them at Aldi.

If you can’t find the shells, try using phyllo dough instead. Allow the dough to thaw. Cut into equal squares and place 1/2 the thickness of the dough into a mini muffin tin. Then bake according to package instructions and assemble.

Another option is to use Tostitos Scoops instead of phyllo shells. Even easier!

GUACAMOLE OPTIONS

While I used pre-made guacamole, you can certainly make your own for this recipe. I used individual servings of the guacamole to cut down on food waste. In total, 3 individual cups were used to make the entire package of shells.

COTIJA CHEESE SUBSTITUTIONS

From time to time, I have a difficult time finding cotija cheese at my local grocery store. A good substitution for cotija is queso fresco.

ADDITIONAL INGREDIENTS

While this recipe is delicious as is, you might also want to try squeezing fresh lime juice over each shrimp bite. For even more flavor, try adding cooked corn kernels. It will add just a bit of sweetness.
