Ham Cheese and Broccoli Breakfast Casserole
Ingredients
- 1 tube Crescent rolls or Crescent dough sheet
- 2 cups frozen shredded potatoes
- 1 – 1 1/2 cups ham, chopped
- 1 – 1 1/2 cups fresh broccoli, finely chopped
- 2 cups cheddar cheese, shredded
- 10 large eggs
- 1 splash of milk
- salt to taste
- pepper to taste
- fresh chives to taste
Instructions
- Preheat oven to 375 degrees.
- Grease a 9×13 casserole baking dish or lasagna pan.
- Lay Crescent rolls or Crescent dough sheet on the bottom of the pan. Press out the dough so it covers the entire bottom of the pan.
- Add frozen shredded potatoes on top of the dough.
- Add ham on top of the potatoes.
- Add broccoli on top of the ham.
- Add cheese on top of the broccoli.
- In a bowl, whisk together: eggs, milk, salt and pepper. You can use any milk you have on hand or half & half (including fat free, which is what I typically use because we always have it.)
- Pour egg mixture evenly right on top of the cheese into the casserole dish.
- Bake uncovered at 375 for 30 minutes. Remove from the oven and cut into 8 pieces. Bake for another 15 minutes or until golden brown.
- Top with fresh chives or green onions and enjoy!

CRESENT ROLL SUBSTITUTIONS
You may use a tube of Crescent rolls or a Crescent dough sheet. Either work great. If you use the rolls, make sure you press the seams together in the pan before adding any other ingredients on top. If you use the dough sheet, you make also need to stretch the dough a bit to cover the entire bottom of the pan.
HAM SUBSTITUTIONS
I frequently make this breakfast casserole with sausage instead of ham. If you love breakfast sausage, you’ll love this Sausage Egg and Cheese Hashbrown Breakfast Casserole recipe!
FAVORITE MIXING BOWL
You may certainly use a traditional glass mixing bowl for the egg mixture, but I love this mixing bowl for eggs and baking! It’s super light weight, so makes pouring much easier.
CASSEROLE DISH
Make sure to use a casserole dish or lasagna pan for this recipe. You don’t want to use a shallow 9×13 glass dish, for example. You need the extra space on this one – trust me! Here’s an example of the type of dish you want to use.
BRUNCH MENU PAIRINGS
If serving this for brunch, I recommend pairing with a fruit salad or spinach salad on the side. Add in a glass of OJ or a mimosa and you’re all set!

I hope you love this ham cheese and broccoli breakfast casserole! Thanks for stopping by!
