Homemade Blueberry Pop Tarts

Pop tarts of all flavors are having their moment on the internet right now, so I decided to try homemade blueberry pop tarts. This version is actually homemade(ish) because making a pie crust from scratch isn’t my idea of a good time. 🙂 It requires just a few ingredients including a jar of your favorite blueberry jam or preserves and a grocery store pie crust. If you loved eating pop tarts as a kid, you will love this “homemade” version. If you can eat just one – you have much better will power than me!

Homemade Blueberry Pop Tarts

Ingredients

Pop Tart

  • 1 frozen pie crust
  • blueberry jam or preserves (to taste depending on how much filling you prefer)
  • 1 egg (for egg wash)

Frosting

  • 1 cup powdered sugar
  • 2 Tbsp softened butter
  • 1/2 tsp vanilla extract
  • 2-3 Tbsp half & half
  • 1 Tbsp fresh lemon juice (use a lemon, do not use store bought lemon juice)
  • 1/2 tsp blueberry jam or preserves
  • sprinkles optional

Instructions

  • Thaw frozen pie crust to room temperature.
  • Preheat oven to 375 degrees.
  • Roll out crust and cut into rectangles. You should be able to get 12 individual rectangles from 1 pie crust. If the crust you're using comes already rolled out, make sure to roll out even further with a rolling pin.
  • Add blueberry jam or preserves to half of the pie crust rectangles, leaving a border around the edges.
  • Place the remaining rectangles on top of each so that the blueberry jam/preserves is sandwiched in between two layers of crust.
  • Seal the edges with a fork.
  • Brush with egg wash (1 egg beaten + 1 tsp water). Poke the top of each with a fork several times.
  • Bake at 375 degrees for 14-17 minutes or until golden brown.
  • While the tarts are baking, make frosting. Mix together powdered sugar, softened butter, vanilla, half & half, lemon juice and 1/2 tsp blueberry jam/preserves with a hand or stand mixer.
  • Allow tarts to cool. Top with frosting and desired sprinkles. Enjoy!

Notes

If you have a pie crust recipe that you love, you may prefer to sub that for the grocery store version.
Feel free to experiment with the color of the frosting. The amount of blueberry jam you add will ultimately determine the color.

SPRINKLES

While sprinkles are totally optional for this recipe, they certainly are fun and jazz up just about anything you use them on. As you can see from the above photo, I couldn’t decide which type of sprinkles I liked best so decided to use both! Feel free to use whatever you have on hand. They will look great no matter what you choose. You may also wish to skip the blueberry jam in the frosting completely and go with an all white frosting. If you decide to skip the blueberry jam in the frosting, make sure to omit the lemon juice. Then, top with sprinkles or crushed dried blueberries for a more elevated look!
