Pimento Cheese Bites

Equipment

  • biscuit or cookie cutters

Ingredients

  • 1 puff pastry sheet
  • pimento cheese dip
  • 1 jalapeno, seeded and diced
  • fresh chives, chopped to taste
  • 1 egg

Instructions

  • Preheat oven to 400 degrees.
  • Thaw puff pastry until just pliable but still cold (5-10 minutes).
  • Using a 1.9 inch biscuit or cookie cutter, cut out circles. You will be able to get at least 12 circles total with 1 puff pastry sheet.
  • Using a 1 inch biscuit or cookie cutter, cut a small circle into each of the above larger circles. Make sure the biscuit/cookie cutter cuts all the way through the dough but leave in place.
  • Prick the small circle with a fork.
  • Brush each with egg wash and bake for 10-12 minutes or until golden brown.
  • Allow to cool slightly and add your favorite pimento cheese dip/spread.
  • Top with fresh chives or diced jalapeno.
  • Enjoy!

Notes

You will want to work quickly so the dough is still cold when you place into the oven. The dough should rise around the small circle when baking. If you remove from the oven and find that the entire piece has puffed, just push the inner circle down with the back of a small spoon so that you have a space for the pimento cheese.
These are great served hot out of the oven or served room temp / cold. I recommend making the puffs the day of the party! They will not be as good the next day.

PIMENTO CHEESE

I used a pre-made pimento cheese which you can find at most major grocery stores. This is one brand I love (used here) and in the video you may have seen on Instagram. The taste is fabulous and I highly recommend trying. You can also make your own if you prefer.

OPTIONAL ADD-ON INGREDIENTS

If you want to try adding a meat to this recipe, you could add chopped bacon on top of the cheese. Everything is better with bacon, right? 🙂

CHIVES VS JALAPENOS

In my opinion, almost every recipe is better with a little kick, so my preference for this recipe is the diced jalapeno. Not only does it add a little heat, but also a nice crunch, which I love. If you don’t like heat/spicy foods, you can use fresh chives as noted above.

EQUIPMENT

For this recipe, you will need biscuit or cookie cutters, which are linked here. If you don’t have any on hand, you can cut your puff pastry into squares.

this is more of a question than a comment, can I make the puffs the day before and then add the pimento cheese the next day?

I wouldn’t. They are best the day of.
