Baked brie is one of those things that you either love or hate. I have always loved it, but my husband could never get on board…until this recipe! The second he tasted it, he said, “Now that is how you do brie!” At that moment, I knew I had to hit publish!

Pumpkin Baked Brie with Bacon
Ingredients
- 1 sugar pumpkin
- 8 oz brie
- 1/8-1/4 cup chopped walnuts
- 1 drizzle of hot honey to taste
- 3-4 slices bacon
- red pepper flakes to taste
Instructions
- Preheat oven to 400 degrees.
- Cut off the top of the pumpkin. Clean out the seeds and fibers.
- Score a wheel of brie or cut off the top completely if you do not care for the rind.
- Place brie in the pumpkin. *If making for a larger crowd, add addition brie without the rind.
- Top brie with chopped walnuts, drizzle of hot honey (to taste) and red pepper flakes (to taste)
- Place pumpkin on a baking sheet with the stem/top of the pumpkin next to it on the sheet (not on top of the pumpkin).
- Bake at 400 degrees for 30 minutes.
- While the pumpkin is baking, fry the bacon. Pat bacon with a paper towel to absorb excess grease and chop.
- Remove pumpkin from the oven and add the cooked, chopped bacon.
- Bake for additional 10-15 minutes until the cheese is melted.
- Serve it up with garlic crostini, hearty crackers and apple slices.
Notes
HOT HONEY
I love Mike’s Hot Honey for this recipe. It’s not too spicy. It just adds a little kick to whatever you’re putting it on. I also love adding Mike’s Hot Honey to my pizza – so good!
SERVING SUGGESTIONS
As noted in the recipe, I recommend serving with garlic crostini, hearty crackers and apple slices. To make garlic crostini, simply slice a baguette into equal pieces. Brush with extra virgin olive oil and bake until golden. I prefer to bake at a lower temperature, such as 250 degrees, to avoid becoming too crispy and difficult to eat. Bake until golden (5-10 minutes depending on oven temp). While still warm, rub a garlic clove over each piece. You may also toast on a grill pan or frying pan if you prefer to baking. If you don’t care for garlic, simply omit the garlic step.

FAQ: CAN I CLEAN THE PUMPKIN IN ADVANCE
Yes! You can absolutely cut and clean out your pumpkin the day before you want to consume it. In fact, I highly recommend it! That way, the hardest part is over. You don’t want to be stressed out and cutting a pumpkin the day of the party.
