  • 1/2 cup mayonaisse
  • 2 Tbsp ketchup
  • 1 Tbsp relish (dill or sweet can be used)
  • 1 tsp white vinegar

Rueben Crostini Appetizer

  • 1 French baguette (cut into 18 slices)
  • olive oil to taste
  • 1 cup shredded corned beef
  • special sauce (above) to taste
  • 2/3 cup sauerkraut, drained
  • 1 cup shredded Swiss cheese
  • fresh chives for garnish

Instructions

Corned Beef

  • Place corned beef in a slow cooker. Add seasoning packet that comes with the corned beef, and bay leaves. Top with the beer. Add water until the beef is mostly covered with liquid.
  • Turn slow cooker on high for 1 hour. Then, turn to low for 6-7 hours (for 4-5 pounds). Cook time will vary slightly based on the size of beef you get. If your beef is much larger, you will need to add time.
  • Remove corned beef from slow cooker, allow to cool slightly and discard the fat. Shred.

Special Sauce

  • Caramelize onion with extra virgin olive oil and butter.
  • Allow onions to cool and mix together with mayo, ketchup, relish and vinegar.

Rueben Crostini Recipe

  • Preheat oven to 350 degrees.
  • Slice baguette into even slices (approximately 18 slices depending on the size of your baguette).
  • Drizzle each slice with olive oil.
  • Bake on parchment lined baking sheet at 350 for 5 minutes.
  • While the bread is baking, shred cheese.
  • Remove bread from oven and top each with: sauce, sauerkraut, corned beef and cheese.
  • Bake for an additional 10-15 minutes or until cheese is melted.
  • Top with chives.
  • Let cool and enjoy!

Notes

You will likely have leftover beef. I’ve noted other ideas to repurpose the beef below.
Corned beef and sauce can be made 1-2 days in advance.

WHAT DO DO WITH LEFTOVER CORNED BEEF

Reuben Sandwiches

We typically make a corned beef or two every year with the purpose of making traditional reuben sandwiches. To make a reuben sandwich, you will need rye bread. Simply follow the instructions above except add your ingredients to rye bread. They can be eaten cold or hot. We like to butter the rye bread and fry (similar to a grilled cheese). Enjoy with fries, tater tots or a salad on the side. Also pairs well with a cold beer!

Reuben Pizza

We also love to repurpose any leftover corned beef to make reuben pizza! Simply make your favorite pizza crust or buy one at the grocery store. I love the dough crusts from Trader Joe’s (in the deli section by the deli meat and cheese). Roll out the crust, poke holes and bake for a few minutes. (See my Heart Shaped Friendship Necklace Pizza recipe for more crust instructions.) Remove from the oven and add the special sauce, corned beef, sauerkraut and Swiss cheese. Add some mozzarella to the mix for an extra cheesy pizza! Then bake until golden brown.
