TYPES OF SWEET BELL PEPPERS

You can use any combination of sweet bell peppers you have on hand. I make this recipe differently each time based on what I have. You really can’t go wrong. Just make sure you are using sweet bell peppers (red, orange or yellow). Do not use green peppers with this recipe. It will give it a completely different taste and won’t be very appealing.

EQUIPMENT

For this recipe, you will need a standard blender or an immersion blender. This Ninja blender is a great option if you’re in the market. I also personally have a Cuisinart immersion blender (or hand blender) and it has worked great for years.

STAUB CAST IRON DUTCH OVEN TOMATO COCOTTE

While a Dutch oven shaped like a tomato isn’t necessary for the success of this recipe, it sure doesn’t hurt. This Staub cast iron Dutch oven tomato is just the cutest vessel to serve your soup from.

CAN YOU FREEZE LEFTOVERS?

This roasted bell pepper and tomato soup freezes extremely well! I always have leftovers to freeze. I especially love to freeze in individual servings so I can have fresh tomato soup throughout the winter whenever I want.

Serve them up as bites, or cut into thin strips for dippers. Feel free to leave whole as pictured below if desired.
