Sausage Egg and Cheese Hashbrown Breakfast Casserole

This sausage egg and cheese hashbrown breakfast casserole is going to be your new go-to for holiday breakfasts! It has everything you love about breakfast – sausage, eggs, cheddar cheese and hashbrowns. How could you not love that? I’ve made this for guests and everyone always asks for the recipe! Sausage Egg and Cheese Hashbrown Breakfast Casserole

Ingredients
  

  • 1 tube of Crescent rolls or Crescent dough sheet
  • 1 pound ground breakfast sausage
  • 2 cups frozen shredded potatoes
  • 2 cups shredded cheddar cheese
  • 10 large eggs
  • 1 splash of milk
  • salt to taste
  • pepper to taste
  • fresh chives to taste, optional
  • red pepper flakes to taste, optional

Instructions
 

  • Preheat oven to 375 degrees.
  • Brown breakfast sausage in a pan and drain the grease.
  • Grease a 9×13 casserole baking dish or lasagna pan.
  • Lay Crescent dough sheet on the bottom of the pan. Press out the dough so it covers the entire bottom of the pan.
  • Add browned sausage on top of the Crescent dough.
  • Add frozen shredded potatoes on top of the sausage.
  • Add shredded cheese on top of the potatoes.
  • In a bowl, whisk together: 10 eggs, a splash of milk. salt, pepper and red pepper flakes (optional) to taste. You can use any milk you have on hand or half & half.
  • Pour egg mixture evenly right on top of the cheese into the casserole dish.
  • Bake uncovered at 375 for 30 minutes. Remove from the oven and cut into 8-10 pieces. Bake for another 15 minutes or until golden brown.
  • Top with fresh chives or green onions and enjoy!

SUBSTITUTIONS FOR SAUSAGE

This recipe is also great with ham! It’s a fantastic way to use up any leftover ham you may have lingering from the end of year holidays or Easter! Simply sub the sausage for diced ham.

VEGGIES

If you decide to substitute ham instead of sausage, try making a western omelet style casserole by adding your favorite veggies like onions and green bell peppers.

CRESENT ROLL SUBSTITUTIONS

You may use a tube of Crescent rolls or a Crescent dough sheet. Either work great. If you use the rolls, make sure you press the seams together in the pan before adding any other ingredients on top. You make also need to stretch the dough a bit to cover the entire bottom of the pan.

FAVORITE MIXING BOWL

You can certainly use a traditional glass mixing bowl for the egg mixture, but I love this mixing bowl for eggs and baking! It is super light weight, so makes pouring much easier.

CASSEROLE DISH

Make sure to use a casserole dish or lasagna pan for this recipe. You don’t want to use a shallow 9×13 glass dish, for example. You need the extra space on this one – trust me! Here’s an example of the type of dish you want to use.

BRUNCH MENU PAIRINGS

If serving this for brunch, I recommend pairing with a fruit salad or spinach salad on the side. Add in a glass of OJ or a mimosa and you’re all set!
