Sausage, Kale and Ditalini Soup

This sausage, kale and ditalini soup is one of my favorites to make in the cooler months. It’s packed with flavor and perfect for using up any leftover sauce you may have lingering in the fridge. Serve it up with a side salad or garlic bread for dipping and you’ve got yourself a cozy, comforting meal. This soup is great leftover too, so make sure to pack it up for lunch the next day!

SUBSTITUTIONS

You may be tempted to sub spinach for kale in this recipe. While you can certainly do so if you wish, I find the kale holds up a little better than spinach in soup recipes like this. Kale is also great in pasta dishes and salads such as a kale Caesar.

I hope you love this sausage, kale and ditalini soup recipe! Looking for more soup recipes? I’ve got you covered with 2 more must try soups. The first is my turkey and wild rice soup. This is fabulous for using up leftover turkey from holiday meals, but you can easily substitute chicken instead. I do this all the time and it’s a family favorite! The second is my roasted bell pepper and tomato soup. The bell peppers add a bit of sweetness and depth of flavor to this classic tomato soup recipe. Pair it with some grilled cheese or garlic bread and you’ve got yourself a meal!
