Spinach Artichoke Jalapeno Poppers

These spinach artichoke jalapeno poppers are delicious, addictive and perfect for gatherings and game day grazing. You might want to hide a few for yourself because these will be gone in no time. They’re the perfect combination of two classic appetizers: spinach artichoke dip and jalapeno poppers. Talk about two of my favorite things! The best part is, they are delicious served hot, room temp and even cold. I might have snagged a few from my fridge for a pre-dinner snack. And, my husband gave these a 10/10 – perfect score so you know they’re good!

WHY BACON?

Why do I use bacon in this recipe? Because bacon makes everything better. 🙂 If you’re on a serious budget, you can skip the bacon if you wish. It will be delicious with or without.

WHY BREAD CRUMBS?

I love using bread crumbs in this recipe because it gives each piece a little crunch, which everyone loves!

SPINACH ARTICHOKE DIP

You can also easily make this recipe into a dip by doubling or tripling the jalapeno filling. Simply add to a baking dish with a few jalapeno slices on top (you won’t need as many jalapenos). Add mozzarella cheese until your heart says stop, add bread crumbs, then bake until golden. It’s incredible!
