Spinach Artichoke Pasta

Ingredients

  • 16 ounces fettuccine
  • 14 ounces quartered artichoke hearts, roughly chopped
  • 1 medium sized white or yellow onion, roughly diced
  • 8 ounces spinach
  • 5.3 ounces garlic Boursin cheese (1 package)
  • 1 cup parmesan cheese, shredded
  • 1 lemon
  • extra virgin olive oil to taste
  • salt to taste
  • fresh cracked pepper to taste
  • red pepper flakes to taste
  • 1 1/2 – 2 cups pasta water

Instructions

  • Cook pasta according to package instructions until al dente. Before draining pasta, make sure to reserve 2 cups of pasta water.
  • While pasta is cooking, make sauce. Heat extra virgin olive oil in a large pan over medium low heat. Add onions and sauté for a few minutes. Add artichokes, Boursin, salt, pepper and 1/2 cup pasta water. Stir well until the cheese is melted and pasta water has fully incorporated with the cheese to make a sauce. Add more pasta water 1/4 cup at a time, stirring as you add until sauce reaches desired thickness.
  • Add spinach and cover until spinach has cooked down.
  • Drain pasta and add it to the pan with the spinach artichoke sauce, removing from heat. Add more pasta water 1/4 cup at a time until it reaches desired consistency. *The entire dish requires 1/5-2 cups pasta water.* Top with parmesan cheese, red pepper flakes, more pepper (if desired) and the juice of 1 lemon. Optional: finish with flaky salt.
  • Serve it up and enjoy!

PROTEIN ADD-ONS

I highly recommend serving this recipe up with some grilled shrimp or chicken. We recently had it with shrimp and loved the combo. You could also serve with grilled salmon or other fish of your choice on the side. See the photo below for inspo.

ALTERNATIVES FOR BOURSIN

Boursin is now in most grocery stores, but if you can’t find it or they are out of the garlic flavor, you can use any garlic spreadable cheese such as Alouette or President. Note the ounces on a standard package of Boursin above, but feel free to add more cheese if you wish.

If you can’t find garlic spreadable cheese, simply buy an herb flavor such as chive and add your own fresh garlic. This is a also good option for those that do not care for garlic as garlic spreadable cheese is quite garlicy.

WINE PAIRING

Looking for a wine to pair with this meal? I recommend trying it with a crisp Sauvignon Blanc!
