The Best Coleslaw You Will Ever Eat

  • 2 cups mayonnaise
  • 3/4 cup sugar
  • 6 tbsp extra virgin olive oil
  • 5 tsp tarragon vinegar
  • 1 red onion, diced medium or large
  • 1/2 tsp celery seed
  • 3 bags coleslaw
  • salt and pepper to taste

  • Whisk together mayonnaise, sugar, extra virgin olive oil, vinegar, celery seed, salt and pepper in a bowl.
  • To a large mixing bowl, add bags of coleslaw and chopped onions.
  • Pour mayonaisse mixture over the coleslaw and mix well. This will require the largest bowl you have. I typically start with 2 bags, then cover and refrigerate for several hours. The coleslaw will reduce in size which will allow you to add the third bag. After the third bag is added, cover and refrigerate over night.
  • Stir well before serving, as the juices will have settled on the bottom of the bowl overnight.

The salt and pepper in this recipe is to taste, as noted above. You really don’t need much, as this recipe is delicious as is. You can even leave it out completely if you wish.

I use this veggie chopper to cut down on time and dice my veggies evenly. It’s a life saver in the kitchen, particularly for summer recipes, pasta salads and soup! I LOVE this thing!!! I have the 2 in 1, because I didn’t need the spiralizer.

I buy bags of tri-colored coleslaw which contain both cabbage and carrots. I like the added flavor and color that the purple cabbage and carrots provide. We eat with our eyes first, after all. If you can’t find tri-colored coleslaw mix, most any bag of coleslaw will do. I would avoid the angel hair coleslaw mix though. It changes the texture and isn’t my favorite for this particular recipe.

On occasion, I have a hard time finding red onions where I live. Make it make sense. In those instances, I have used a yellow or white onion. All three taste great, so you can’t go wrong no matter which type of onion you have. You can use more or less onion, depending on your preference. We are a family that likes a lot of onion, so I always use at least a medium sized onion.

One common question I get is: “Can you substitute another vinegar for tarragon vinegar?” No. You cannot. It’s the “secret” ingredient in this recipe. I suppose you could, but it wouldn’t be as tasty – or the same recipe. Tarragon vinegar can be hard to find on occasion. They do sell it at most nationwide grocery stores like Walmart. If you’re in my neck of the woods, you can also find it at Hy-Vee and Fareway. The brand I use is Heinz.

I love to add fresh diced or sliced jalapenos to this recipe from time to time. Unfortunately, I reside in a family who thinks ketchup is spicy, so I tend to leave that off for family potlucks and gatherings. If you like spicy, definitely top your bowl with fresh jalapenos! It’s absolutely delicious!

This recipe serves a crowd! It’s meant to make a lot for potlucks and gatherings. You can cut the recipe down by 1/2 or even to 1/3. Trust me when I say, this is the best coleslaw you will ever eat! Try it and let me know how you like it!

Need another potluck recipe? I recently brought these to a party and everyone RAVED about them. So good!
