Equipment

  • 1 roasting pan
  • quart size freezer bags

Ingredients

  • 36 ears sweet corn on the cob
  • 1 pint half & half
  • 3 sticks butter

Instructions

  • Shuck and silk 36 ears of corn.
  • Using a sharp knife, cut the corn off the cob.
  • Using the back of the knife, scrape the cob to collect any remaining juices on the cutting board.
  • Preheat oven to 350 degrees.
  • Place corn kernels in a roasting pan.
  • Cut 3 sticks of butter into even sections. You can do this by tablespoon but it doesn't need to be exact.
  • Add 1 pint half & half to the corn and stir.
  • Add butter to the top of the corn.
  • Bake at 350, uncovered for 1 hour. Stir well every 20 minutes.
  • Remove from the oven after 1 hour and stir again.
  • Using a large spoon or ladle, scoop the hot corn into quart sized freezer bags. We typically do 3-4 soup ladles per bag. There will approximately 10 bags total. Make sure you get juice from the bottom of the pan in each bag.
  • Seal each bag, pressing the air out of the bag while you seal. You may need to wipe off any excess corn or juices so it will seal properly.
  • Place freezer bags in an ice bath and allow to cool.
  • Once cool, place in the freezer for later use.

Notes

When ready to eat frozen corn, simply remove a bag from the freezer. Allow to thaw so that the corn releases from the bag. Place in a sauce pan to warm. The corn does not need to be cooked, as you already baked it in the freezing process. Simply heat until warm. Add salt and pepper as desired.

CORN GADGETS

There are many corn gadgets to help you in this process. You are welcome to give them a try if you like, but just know it will change the consistency of the corn. Some of the gadgets on the market make the corn kernels smaller with more juices being released. Your result will almost be like a creamed corn. That is delicious too, but is different from the method above.

Here is a complete list of supplies and gadget add-ons for your convenience.

BUTTER

If you came to this page from my social media videos, you might be thinking to yourself: “That looks like an awful lot of butter.” It IS a lot of butter. But it is also a lot of corn. You can use unsalted or salted butter in this recipe. Either is perfectly fine – just personal preference.

HOW LONG WILL THIS TAKE

The entire process is several hours from start to finish. I recommend doing this in groups with at least 2 people. 3 is even better. 2 of the 3 can start with shucking and silking, while the other is cutting the corn off the cob and placing into the roasting pan. When you get to the point of bagging the corn, have one person holding the bag, one scooping and one sealing and placing into the ice bath. Although time consuming, this really is the best recipe for how to freeze fresh sweet corn.

WHERE TO GET THE BEST SWEET CORN

The best sweet corn always comes from a road-side stand! You can occasionally find good, fresh sweet corn in the grocery store, but I find it’s best and the most fresh to get it straight from the farmer or his/her stand.

DOUBLING OR HALFING THE RECIPE

You can absolutely double or half this recipe! Do what works for you and your family. I promise if you make a whole bath, you won’t have anyone turning down a bag though.

If you try this, I hope you love it! Thank you for stopping by!
