Updated Pigs in a Blanket

Pigs in a blanket is an appetizer staple for gatherings, tailgates and more. Although the original version is delicious, it’s time we remix the classic recipe and make an updated pigs in a blanket. I like to call them fancy piggies. What can I say? It’s got a nice ring to it. Fancy piggies are just as fun to make as the original but the taste has gotten a complete flavor glow up. While I made them for my Game Day Grazing series on social media, you can definitely make them for any party or occasion.

Updated Pigs in a Blanket

Ingredients

  • 1 package crescent rolls
  • 2 small sweet bell peppers – not mini peppers (orange, red or yellow)
  • 1 medium onion
  • 6 pre-cooked andouille chicken sausage links
  • 1 egg for egg wash
  • extra virgin olive oil spray
  • everything but the bagel seasoning to taste
  • Dijon mustard for dipping

Instructions

  • Preheat oven to 375 degrees.
  • Slice onions. Clean, dry and slice peppers. I like to slice them into longer strips and then slice again in half. You will need them small enough to fit into crescent roll.
  • Spray pan with extra virgin olive oil spray. Sautee onions and peppers over medium heat until veggies start to soften. If you prefer to use just extra virgin olive oil instead of the spray, use just enough so the veggies will not stick to the pan. This will be a very small amount – 1 tsp or less. You do not want the peppers to be oily as this will make the crescent roll soggy.
  • Open crescent rolls and cut each triangle lengthwise in half. You will have 16 triangles when you're finished.
  • Cut each sausage into 3 equal parts. If you want the same number of sausages as crescent rolls, cut 2 of the sausages in half instead of thirds. If you do this, there will be 4 fancy piggies with bigger sausages. I prefer to cut into thirds and save the extra sausage pieces for another recipe.
  • Add onions and peppers to the widest end of the crescent triangle.
  • Add sausage on top of the onions/peppers.
  • Roll the mixture up from the widest end to the tip of the triangle.
  • Place each on a parchment lined baking sheet.
  • Brush fancy piggies with egg wash. Sprinkle with everything but the bagel seasoning.
  • Bake at 375 degrees for 15-17 minutes.
  • Dip in Dijon mustard and enjoy!

“PIGS” IN A BLANKET

You’ll see by now that this recipe doesn’t actually contain a pig at all. While I used chicken andouille sausage, you can also use pork andouille sausage if you prefer. While the pork version is delicious, I find the chicken to be a little lighter and less greasy, which is important when making this recipe. You don’t want the crescent roll to get soggy.

KITCHEN TOOLS AND EQUIPMENT

You will need a few standard kitchen tools for this recipe including a pastry brush for the egg wash and a baking sheet. You can find many of my favorite kitchen tools here.
