Veggie Dill Pasta Salad

This veggie dill pasta salad is full of flavor! Plus, as the name states, it’s full of veggies. It’s perfect as a summer side dish alongside grilled meats or to take to a potluck to serve with all your other favorites. Trust me when I say everyone is going to ask for the recipe.

Veggie Dill Pasta Salad


  • 16 ounces rotini noodles
  • 1 cup chopped onion
  • 1 cup chopped broccoli
  • 1 cup chopped cauliflower
  • 1 cup chopped carrots
  • 1 can chopped or sliced black olives small can = 4.25 ounces
  • 2 T Mrs. Dash original seasoning heaping tablespoons
  • 1 tsp salt
  • 1 tsp Italian seasoning
  • 1 tsp dried dill
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 3/4 cup dill dip
  • 3/4 cup ranch dressing
  • Fresh cracked pepper or red pepper flakes optional, to taste
  • shredded or cubed cheese of choice optional, to taste


  • Boil pasta according to package instructions. Allow to cool.
  • Add pasta to a big mixing bowl. Add all remaining ingredients. Mix well.
  • Refrigerate, covered for several hours or overnight.


Noodles typically absorb dressing as it marinates in the fridge, which may leave your pasta salad a bit dry. If you find the pasta salad is a little dry after sitting in the fridge, stir in equal amounts of dill dip and ranch dressing (1-2 heaping spoonfuls at a time) until you reach desired creaminess.
I love to add a little spice to just about any dish. Feel free to add fresh cracked pepper or red pepper flakes. You may also add your favorite cheese, but wait until just prior to serving to add the cheese so that it doesn’t get soggy.

Rotini noodles tend to work best in this pasta salad, but feel free to experiment with your favorite noodle shape. Make it your own!


I can’t think of a thing that doesn’t taste better with a little cheese! If you’d like to amp up the flavor even more, try adding shredded or cubed cheese. As I mentioned in the notes above, just make sure you wait to add the cheese until just before serving so that the cheese doesn’t get soggy. I love a sharp cheddar or pepper jack in this recipe!


Feel free to experiment with different veggies in this pasta salad! Fresh peas, for example, would be a delicious addition. I also loving using my veggie chopper for this recipe because it helps speed up the prep time!

There are, no doubt, a lot of spices in this pasta salad. Nobody likes a boring, flavorless pasta salad, I’ll tell you that! You really do need them to help flavor this dish.


If you like to meal prep, this pasta salad can be made ahead of time and eaten all week. I mentioned adding cheese above, but you could also add some grilled cheese for a little extra protein. As a matter of fact, I plan to eat the leftovers with some grilled chicken tomorrow night! Dinner is *almost* done!
